As of recent estimates, New South Wales is home to more than 5 million head of cattle, giving it the largest beef herd of any state in Australia. The majority of these cattle are managed on medium to large properties, with the highest densities found across the Northern Tablelands, North West Slopes, Hunter Valley, and Riverina regions.
NSW’s beef industry is diverse, ranging from intensive grazing systems in the coastal and tableland areas to extensive grazing in the drier western plains. Around two-thirds of beef produced in the state is consumed domestically, with the remainder exported to high-value international markets. NSW beef consistently meets the strict quality benchmarks set by Meat Standards Australia, maintaining its reputation for premium quality.
Per capita beef consumption across the state is strong, averaging around 20–25kg per person annually. In addition to fresh meat, cattle provide a wide range of by-products that are utilised across industries. Beyond the well-known leather trade, cattle by-products contribute to everyday items such as paint brushes, bone china, musical instrument components, adhesives, and many more essentials that extend the value of the industry well beyond the dinner table.

While towns such as Bega and Gloucester are synonymous with dairy in New South Wales, the state is in fact one of Australia’s largest dairy producers, contributing close to a third of the nation’s milk supply. Much of this production is concentrated in regions with rich pasture and reliable rainfall, including the South Coast, Hunter Valley, Northern Rivers and parts of the Tablelands.
Although large processors handle the bulk of NSW’s dairy output, there are also many smaller and family-run operations producing specialty and boutique products. These include organic dairies, artisan cheese makers and niche creameries that add significant diversity and value to the state’s dairy industry.
NSW dairy has long been based on predominantly pasture-fed, free-range systems, meaning it did not undergo the same structural shift as more intensive industries like poultry and pork. This focus on natural grazing continues to underpin the industry’s reputation for quality milk and dairy products.
